Jerry. Barry and Gary are looking for a wok. As soon as I get my roof leaks fixed Ill have time to get back in the shop to build yalls lifters.

I got volunteered to cook Pan de Campo for our annual men's BBQ fellowship at church this weekend. Now, I've done PDC many times in the past....just not for 150 people! Oh, well, what's life without an occasional challenge? So I pulled out all the iron and bought 20 lbs of flour and the other fixins, and went after it! Pulled it off and everyone seemed to like it!

I was disappointed in the recipe that I used. I needed a large batch recipe and found one that sounded about right. It was untested and I found it plain and tough (my opinion...noone else found anything wrong with it). Lessons learned.
Here is a good recipe that I normally use. Lighter and more taste!
2 c. flour
3 tsp. baking powder
1 tsp. salt
3/4 c. shortening
1 1/2 c. buttermilk
Preheat oven to 400 degrees. Sift flour, baking powder, salt and (sugar). Work in shortening into flour mixture. Add buttermilk. Knead dough until all mixture is smooth. Roll dough out 1/2 inc thick and place on a lightly greased baking pan. Bake until browned.
