Gonna be staying for a week in a place called Seacrest (20 miles or so south of destin). Hauling my kayaks with me. any tips on area fishing?

Try the lakes - Deer Lake, Eastern Lake, Redfish Lake, there are a couple others. They can hold both bass and reds. I haven't found them prolific producers, but it's good easy paddling and an occasional fish.
If you are a BTB guy, there are plenty of king mack out past the second bar - or so say some people.

One more thing - I've chartered Capt Todd out of Panama City a couple times - we get our moneys worth of snapper or grouper, depending on the season. Seacrest is a bit closer to PC than Destin, I think. I recommend him - boat trip, not kayak.
