Raccoon doesn't taste like chicken at all. We used to shoot them at night and after cleaning them, the next day my dad would sprinkle them with Lipton Onion Soup mix and cover them in potatoes, carrots and pearl onions and bake them.
Possum is just greasy but you can make a decent stew out of it.
Nutria doesn't taste like chicken. Rabbit can taste like chicken when you fry it.
Squirrel doesn't take like chicken. I was raised on squirrel dumplings in brown gravy and it can be really gamey and tough if you don't cook it right.
