Surf fishing...which reel/rod should I buy?

For the last 10+ years I have been exclusively wade fishing in and out of kayaks, the back bays of Rockport. I used to BTB High Island area for many years before that. But I now have an opportunity/obligation to "play" at the Galveston beach and I HAVE TO put out some surf rods. My problem is that about 3 years ago I had all of my surf rods/reels and BTB rods/reels stolen. BIG loss! I had owned these surf rods for decades and using them sparingly, I no longer remember what brands I had, and surely have not kept up with current products.
So, I'm looking for recommendations on a mid-priced bait casting reels and rods. I am planning on purchasing 2 reels and 2 rods with the intent of casting out large baits and catching primarily large bull reds and the occasional shark.
Wade fishing bay shorelines and reefs are my passion, but I want to replace them to have at hand as I sparingly use them over the next several decades, showing my grandchildren how cool fishing the surf can be.

There are two things to do at the beach, cast lures (3/8 to 1 oz), and stake out bait on a spider weight (2 to 4 oz)

Lure casting can use the same reels you use inshore, and a longer rod helps.
Easiest thing to add here is an MH steelhead rod, 8' to 9'.
Look at Lamiglas X-11.

Longer surf rods can get spendy, but a good place to begin is Tsunami.
Consider spinning reels 6000- to 8000-size.
