Ceviche for the 4th
Ceviche for the 4th
the family wanted something cool for the 4th
a big bowl of Ceviche
this batch was Fiesta fish dept.
8 big tilapia fillets, still a little frozen
4 containers of their fresh PicoDeGallo, 1-hot, 3-mild
2 small jars of capers (Butch Boles taught me that one)
20 small limes
i let the chopped fish marinate in the lime juice over night
then i put it all together in a plastic colander in the sink to drain
fish, Pico and capers.
then dump it back in the big bowl
and put it away into plastic containers

Looks amazing. So do you marinate only the fish in the lime juice? Also, what is the minimum time you can soak it? Really been wanting to try making some of this.

Home brewed Mexican pilsner, although I don't think my equipment can make enough for all of TKF!

it was my best batch
we pounded on it yesterday, with Debbie's mom
she asked me to make it
and i've pounded on it twice this afternoon
i'd eat more, but i'm stuffed

While I have a psychological problem when it comes to ceviche (darned near died from eating conch ceviche in Veracruz) I got to tell ya', that looks super delicious.
