Good link BB.
One of my favorites is to filet the breasts, season with Tony's, put a big slice of red bell pepper, onion, and jalepeno around the filet - wrap with a small piece of bacon and put them on a skewer and grill. Take the landing gear and saute in a pan with the same ingredients with butter and a splash of beer.

There are farm raised quail to be had in Mattagorda. They sell pickled quail eggs too (they're awesome). Ask where at the fish market with the car wash in its parking lot or ask Mike Thomas at Casa del Pescador lodge. He'll tell you where to get them.
