Works great on Wahoo (sp??)! I'm sure it would be great with Redfish, shark or any other hearty white meat fish.
Clean and fillet fish. Cut fillets into strips, crosswise. Marinate fish in milk and mustard mixture (enough milk to cover fillets and several tbls of mustard - cheaper works better). Let them sit in the refrigerator covered for 30 minutes or a few hours, whatever you have time for...
Roll marinated fillets in grated parmesian cheese (they have a great herb flavored one out now). Fry fillets in a deep pan or fryer.
Tastes great - even my kids think its as good as my "normal" fried fish - done the same way but with heavily seasoned cornmeal.
Makes for a messy clean-up, but it isn't as bad as it will look when you first finish frying.
