Grilled Striper
I prepare the striper like you would Redfish on the halfshell. Just filet it with the skin and scales left on. rub well to get the slime off.
Basting sauce.
1/2 TBSP Old Bay Seasoning
1/2 stick butter
3 cloves garlic finely minced
a couple of turns fresh black pepper
pinch of salt
1/2 tsp hot red pepper flakes. (I make my own by drying those red ones used in chinese cooking and grinding them up fine.)
Heat this up in a microwave for about a minute and a half then add the juice of 1/2 large lime. Mix well. Makes about 1 cup.
Put the fish on the grill skin side down and baste liberally with sauce every few minutes.
flip em for the last minute of cooking and serve.
