Cooking Red fish

I got some red fish from the lake (fresh water) , and i want to cook it on the pit, how i do all my fish but never reds before . Someone said to put them in iced milk over night . Is that true ? does anyone know a good way? and what the heck ever happend to (barnecll bills )someone hurry up and reopen that place!
