Go buy yourself a big ol' (we're in Texas, so I can say that, right?) container of size large button mushrooms.
buy a sleeve of hot breakfast sausage
buy a pack of shredded Monterey Jack cheese
buy a container of Italian style Progresso bread crumbs
pull the stems off the shrooms and discard (or save for soups or whatever)
wash the shrooms
in a mixing bowl add:
3/4s of the sausage
3/4s of the cheese
bread crumbs until it feels firm, but not too dry
mix all that together and then pull bits out to stuff each mushroom - heaping each portion above the cap of the shroom
Bake in a 350 - 375 degree oven until the tops are brown
I LOVE to put Frank's Hot Sauce on these - and you can do that before you bake them for added punch. Sometimes though you have folks with delicate stomachs, so I opted not to bake them seasoned with the Frank's and just bring it along for folks to enjoy. But I forgot the Frank's when I brought these beauties to the BTB event - but I think folks still enjoyed them.
